I did it! I made my first pizza! Yeah, I know what you’re thinking: “Shame on you, fake Italian!”
Well, I have to say in my defence that where I lived I always had a very good pizzeria nearby. And also my mother made a very good one.
Today I discovered that I’m good in making pizza. Bravo, Daria! And I want to share my very very simple recipe with you. But please, don’t ruin the recipe with pineapple!

Here’s what you need for a pizza the size of your oven tray.
For the dough:

  • 500 gr of flour (you can try different types, I’m using one specific for pizza)
  • 2 gr dry brewer’s yeast (5 gr if fresh)
  • 300 ml room temperature water
  • a teaspoon of salt
  • 30 gr of extra virgin olive oil

To make a Margherita:

  • 500 gr of tomato sauce
  • 400 gr of mozzarella
  • oregano if you like it (I don’t use it)
  • a teaspoon of salt
  • a tablespoon of extra virgin olive oil

You need to begin at least 3 hours before baking it.
Now that I’m not working I start in the morning so the dough has a lot of time to rise and it will be easier to digest.

So, let’s start putting the flour and the salt in a bowl. Then melt the yeast into the water and add it to the flour. I mix it first with a fork and then with my hands until I have a smooth mixture. Shape it into a ball, then add the oil and continue kneading with your hands until all the oil will be absorbed by the dough. Form a ball and let it rest for 10 minutes.
Then knead it another bit, form a ball, put it in the bowl and cover it with a cloth and let it rest for at least 2 hours. I put it in the oven and, when I do it in the morning I let it rest 5 or 6 hours.

After this time, take the oven tray and cover it well with oil, not too much, but the dough doesn’t have to stick on it. Now, take the dough, work it just a bit. I, then, divide it in two because only one would be too big to work. Put it on the tray and, with your hands, spread it out. If it is too elastic, wait some minutes and do it again.

Ok, now it has to rest another one hour, so put it in the turned off oven.
In the meantime prepare the sauce. Mix together a tablespoon of oil, a teaspoon of salt and the tomato sauce.
Now take of the dough from the oven and spread the sauce on it. Preheat the static oven at 230°C, then put it inside for 15 minutes.
After that, take it off and put the mozzarella on it (you can slice it or cut it in little pieces) and put it again in the oven for 5-8 minutes.

The pizza is ready! I love to eat it also the day after, is always so good! I love homemade pizza a bit thick and soft. But when I go to the pizzeria I prefer it thin. How do you prefer it?
