Here I am, back after a long period in which I found a job (YAY!) so now I am a regular immigrant with a 5 year permit. I had to reprogram my priorities and to insert again the writing time in my daily routine!
In the meantime I also learned to make cookies. It was my first time ever and it went not bad. Honey and cinnamon cookies are really simple to make and, considering that I don’t have any cake tin, I made them irregular. But I love them as they are. The important thing is the taste, isn’t it?
So, here are the ingredients:
- 320-40 gr flour (I used the 00). The quantity depends on the consistency of the dough. For example, if you use a really liquid honey, the dough will need more flour.
- 100 gr butter (I used soy butter)
- 5 gr baking powder
- 50 gr honey
- 2 eggs
- 150 gr sugar
- 1 teaspoon of cinnamon
- some almonds
After you let the butter melt a bit, you put everything together in a bowl until you have a smooth and compact dough. I started with 320 gr of flour and then I added more after, because with the acacia honey the dough was too soft.
Then roll the dough out on the table with a rolling pin and, if you have them, you can use the cake tins to make the cookies, or you can cut the dough with a knife and make some squares.
Then I add an almond on every cookie before putting them on the baking tray (covered with baking paper). Leave 2-3 cm between one cookie and another. Cook them in the oven at 180°C for 15 minutes.
